October 2009: A while back I found a recipe for Irish car bomb cupcakes here. (If you don’t know what an Irish car bomb is, don’t feel bad. It sounds awful to me. It’s a shot of Bailey’s Irish cream and Irish whiskey dropped into a glass of Guinness. However, the cupcake version is TO DIE FOR!!!) I made them several times to rave reviews, and translated it into a cake version for my friend Jeannine’s husband. Basically, it’s a chocolate cake with a Guinness (or any stout) base. In between the layers of cake is a dark chocolate whiskey ganache (I usually use Jameson). On the outside is a buttercream frosting made with Baileys. Are you drooling yet? You should be! This cake was decorated using melted chocolate to make the letters, guitars and notes for a music lover.
